Any of y'all make much jerky? I found out some cool facts and made a batch using a new recipe. You know how some jerky is moist, flexible instead of hard and dry? Seems there's some science behind the process - correct ratio and absorbing of sugar traps the water molecules, yet prevents them from being active and allowing bacteria to grow. Kinda nerdy I know, but that batch of jerky I made last night was easily the best deer jerky I ever tried.
