1 Cup Dark Brown Sugar
1/2 Cup Paprika
2-1/2 TBS Coarse Black Pepper
1-1/2 tsp Chili Powder
1-1/2 TBS Garlic Powder
1-1/2 TBS Onion Powder
1 tsp Cayenne
2 TBS Kosher Salt

Cover meat with a light coat of yellow mustard. Cover with rub let sit till wet looking. Turn over and repeat.

A friend of mine owns a restaurant in Marengo, IL called Fire and Ice. He does a really great brisket. It has a hint of apple flavor. He won't tell me how he does it. It may be apple wood in the smoker or maybe he bastes with apple juice. Either way it is excellent. I ever thought of icecream with BBQ but after eating a scoup of vanila after finishing my slab of ribs I don't think I can go back to grape Nehi.

Smoked coffee brisket & turkey rub
Ingredients
1/2 cup ground sweet ancho chile or california chile powder
1/2 cup dark instant espresso powder
4 Tablespoons hot smoked Spanish paprika
3 Tablespoons brown sugar
1 Tablespoon dry yellow mustard powder
1 Tablespoon salt
2 Tablespoons freshly ground black pepper
1 Tablespoon powdered ginger

Nice. I have a green egg and a kamado joe. I cooked a couple briskets on the kamado last weekend and they were great. There are tons of recipes on the Internet and everybody does something a little different. I keep it pretty simple. Just make sure you build a good fire to start and keep an eye on your temperatures. It's not as hard as people make it out to be.
