Usually mid June before I dig any up to start checking.
The plants are usually laying down by then.
If it's not ready I just stick it back in the ground and kind of heal up a touch and water it and wait

I have plenty and out near the Cartersville airport.
You can take all you can eat or dig up some to transplant.
It's all loose leaf that keeps reproducing until the heat kills it
