@Miles - fun fact - the communist government of Poland preserved the sausage and meat standards after the war. While Free Europe dropped traditions, and gave average consumers lower-grade, affordable meat, the commies in Poland set up a standard, and continued to produce really high quality ham and sausage that only the rich could afford. Those standards and formulas are gold!
There is a meat store near me run by German, Czech and Russian immigrants. I usually have one of the freezers packed with their meat.
