Seared Sea Scallops on a Bed of Fried Spinach with Soy Mollasses Drizzle

Ingredients:

  • Sea Scallops
  • Spinach
  • 1 Tbl Molasses
  • 1 tsp Soy Sauce
  • 2 Tbl of butter
  • 2 Tbl of EVOO
  • Salt
  • Pepper

Directions:
  • Heat 2 Tbl of butter and EVOO in a skillet on high.
  • Season Scallops with salt and pepper.
  • When oil begins to smoke, place Scallops on skillet 90-120 seconds per side until a nice brown crisp forms on the Scallop.
  • Toss spinach into butter and oil mixture and fry for approx 2-3 mins until spinach becomes crispy.
  • Take spinach out of the oil and pat dry gently with a paper towel removing excess oil.
  • Place spinach on a plate and seat the Scallops on top.
  • Mix 1 Tbl of molasses with 1 tsp of soy.
  • Take soy molasses mix and lightly drizzle over top of plate.
  • Serve and enjoy!
