It is fucking delicious if you fry it. I've never tried it any other way though. You just have to make sure to cut all of the fat off of it. Gator fat tastes like shit. I ruined about a pound of gator meat one time because I didn't cut the fat off and nobody could stomach it to eat what we had already cooked. Most gator meat already comes with all of the fat trimmed off of it but some smaller companies will leave some on just to make more money.

I did not know that about the fat- Will have to remember. I've had it blackened at a local restaurant, but honestly with the blackening spices, it might as well be chicken. Or darn near anything else because you can't taste it.

I soak in hot sauce and buttermilk to rid of any gamey flavor!
